- Milk Procurement & Boiling: Fresh A2 milk from Gir cows is collected and boiled slowly, typically over a wood fire, to disinfect and reduce it.
- Curdling (Setting the Curd): The boiled milk is cooled to a lukewarm temperature and inoculated with a spoonful of curd in an earthen pot (Matka). It is left overnight to ferment.
- Churning (Bilona): The fermented curd is churned using a wooden churner called a Bilona. This can be done in clockwise and anti-clockwise directions (traditional method) to separate butter.
- Separating Butter (Makhan): Churning separates the curd into fresh, white butter (makkhan) and buttermilk (chhaas).
- Heating (Slow-Cooking): The white butter is collected and heated on a slow, low flame in a thick-bottomed vessel. The water evaporates, leaving behind pure butterfat.
- Straining & Storing: The liquid is allowed to cool slightly and then strained to remove any remaining milk solids (residue), resulting in pure, golden ghee.
